The danger in logging and showing every referring site comes from spammers, attempting to flood google's page rank. Google's description of page rank, at a basic level says

"PageRank relies on the uniquely democratic nature of the web by using its vast link structure as an indicator of an individual page's value. In essence, Google interprets a link from page A to page B as a vote, by page A, for page B."

So, the more links to a spammers page, the higher a page rank it gets. Sites which publish raw web logs or raw referral data end up linking back to the spammers site and inflating the spammers page rank (at least until google realises and snaps the spammers rating down).
